Chocolate He Shou Wu Chia Seed Pudding
Chia seeds are mini powerhouses with more calcium than milk, more antioxidants than blueberries and more omega-3 than salmon! He Shou Wu is a great source of antioxidants and helps the body clear dangerous free radicals from the body. This is one of the reasons it is considered an "anti-aging" and "longevity" herb. He Shou Wu is considered a tonic herbs in Chinese medicine, tonifying the liver and kidneys, the jing(adrenals), nourishing the blood and strengthening the muscles, tendons and bones. It has the added benefit of calming the nervous system, making it a great choice for those who are burned out or under high levels of stress.
This treat is great for a snack, or make it at night for a quick healthy breakfast!
2 cups coconut milk
½ cup chia seeds
½ teaspoon vanilla extract
2 teaspoons He Shou Wu
2 tablespoons raw cacao
¼ cup (or less) maple syrup (or sweetener of choice)
Optional: ¼ teaspoon cinnamon powder
Stir all ingredients together, and place in fridge for at least 4 hours, or overnight.
Serve with cacao nibs, nuts, or fresh fruit!
