Raw Vegan Rose Lavender Reishi Cheesecake

Raw Vegan Reishi Lavender Rose Cheesecakes. These mini cheesecakes were so delicious! The combination of Reishi, Lavender and Rose make this the perfect snack/treat for the evening. Each of these herbs helps support a good nights sleep. Taking Reishi can feel like taking a big deep breath after being stressed and wound up. It gives you a chance to feel naturally calm, focused and balanced. 


Base layer:
1 cup walnuts
8 pitted medjool dates
1 tsp Reishi
1/2 tsp vanilla extract
1 tbsp coconut oil


Cheesecake layer:
1 1/2 cup cashews soaked and drained
3 tbsp maple syrup
6 tbsp coconut oil liquified
1/2 tbsp rose water
2 tsp lavender dried
1 tbsp lemon juice
1 tsp Reishi
1/4 tsp sea salt


Mix base ingredients in food processor and press into molds or a spring form cake pan. Place in freezer while making cheese cake layer. Blend all cheesecake ingredients in power blender until smooth. Pour on top of molds, place back in freezer. Freeze for 5 hours or overnight, remove from freezer 30 min before eating!
