Gluten Free Vegan Cordyceps Kumquat Oatmeal Cookies

1 cup gluten-free rolled oats
½ cup gluten-free flour
12 medjool dates
¾ cup quartered kumquats, seeds removed
2 medium sized ripe bananas
Juice of 1/2 lemon
¼ cup unsweetened dried coconut
1.5 tbs chia seeds + 3 tbs water
2 tsp @rootandbones Cordyceps
¼ tsp vanilla powder
⅛ tsp ground cinnamon

INSTRUCTIONS
Preheat oven to 350 F and line a large baking sheet with parchment paper or a nonstick baking sheet.*
Mix chia seeds and with 3 tbs water.
Put kumquats and dates into a food processor and pulse into small pieces.
Add bananas and chia and mix until smooth.
In a large bowl, mix in the remaining ingredients, then add in the wet mixture. 
Roll about 3 tbsp into balls, and press down on baking sheet.
Place into the oven for 20 minutes. Flip over and bake for another 12 minutes.
Cool and serve!
