Gluten Free Purple Sweet Potato Gnocchi with He Shou Wu and Turmeric
Is there anything better than squishy little dumplings? I think not! Being gluten free does not mean missing out on these pasta dishes. You can use regular sweet potatoes, but the purple color was too pretty to pass up. Sweet Potatoes are a yin nourishing food, and to take that another step further, I added He Shou Wu, which is a major yin and blood tonic in Chinese Medicine.
2 cooked, cooled and peeled purple sweet potatoes
1 1/2 cups @bobsredmill gluten free flour mix
Pinch of sea salt
2 tsp HeShouWu.
Roll dough into logs on a floured surface. Keep a bowl of flour nearby to sprinkle if needed. Pinch off small pieces of dough and roll into balls.
To cook, bring a pot of water to a boil, once it is boiling add the gnocchi. Once the gnocchi has risen to the top, strain out and add whatever toppings/sauces you want.
After we prepared ours, I stir fried it in coconut oil and cinnamon with grated turmeric for an extra healthy dose of goodness! But we also ate another batch with tomato sauce, and it was perfect!
