Raw Vegan Vanilla Raspberry Reishi Cheesecake

The recipe for this is very similar to the other Cheesecakes, and once you have the basics down you can add whatever kind of flavors you want!


Crust:
1 cup dates
2 cups raw almonds soaked overnight
1 tbsp chia seeds
1 tsp Reishi
Pulse in food processor until sticky. Push down into spring form cake pan. Set in freezer.


Vanilla Layer:
1 1/2 cups raw soaked cashews
2 tbsp lemon juice
1/3 cup maple syrup
1/2 cup melted coconut oil
1/2 tsp sea salt
1 tsp Reishi
1 tsp vanilla extract
1 tsp vanilla powder
Blend all ingredients in food processor until smooth and creamy. Pour on top of crust layer and place back in freezer.


Raspberry Layer:
1 1/2 cups raw soaked cashews
1 tbsp lemon juice
1/3 cup maple syrup
3/4 cup fresh raspberries
1 tsp Reishi                                                                                                                                                   Blend all ingredients until smooth and pour on top of vanilla layer. Set in fridge over night.
