Medicinal Mushroom Raw Vegan Mint Chocolate Cake

Chocolate and Mint is one of my favorite desserts flavor combos, and I love the coolness of the mint during these warmer summer months. This cake is all vegan, gluten free, and raw! 

BASE:
1 cup soaked cashews
1/2 cup coconut flour
6 soft dates
2 tsp @rootandbones Chaga
1/4 cup raw cacao powder
1/4 tsp sea salt
1/2 cup chilled coconut cream
2 tbsp coconut oil
Blend in a food processor until creamy. Add more coconut cream if needed
Pour into dish of choice and place in freezer.


MINT LAYER:
3/4 cup soaked cashews
3/4 cup chilled coconut cream
1 tsp spirulina
5-8 drops of food grade mint extract
2 tsp Cordyceps
2 tbsp coconut oil
1 tbsp maple syrup
1/3 cup fresh mint leaves
Mix all ingredients in a food processor until creamy. 
Stir in 1/3 cup cacao nibs
Pour on top of chocolate layer and place back in freezer.


CHOCOLATE DRIZZLE:
1/4 cup cacao
2 tsp @rootandbones Reishi
1/4 cup coconut oil
1 tbsp maple syrup
Blend until smooth. Drizzle over the top.
Place in fridge for 4 hours or overnight. 🌱
