Raw Vegan Key Lime Matcha Cake with He Shou Wu:
INGREDIENTS
Crust:
1 cup pitted dates (soaked for 1 hour if dry)
1/2 cup almonds
1/2 cup walnuts
1/3 cup shredded coconut
1 tbsp coconut oil
1 tbsp @philosophielove superfood coconut butter
2 tsp @rootandbones He Shou Wu

Filling:
2 cups raw cashews
1/2 cup melted coconut oil
1 tbsp melted @philosophielove superfood coconut butter
2 tbsp maple syrup
2/3 cup lime juice
1 teaspoon vanilla extract
1 teaspoon matcha powder
2 tsp @rootandbones He Shou Wu

INSTRUCTIONS

1. To make the crust, combine all the ingredients in a food processor until sticky.
2. Once the crust is sticky, press it down into a 9 inch spring form cake pan. 
3. Blend the filling ingredients in a food processor until soft and creamy.
4. Pour the filling over the crust and place in the freezer for at least 3 hours (or let it sit overnight).
5. Take the pie out of the freezer 20 minutes prior to eating.
