Cordyceps Almond Flour Fig & Pear Cake

gluten free cordyceps cake

This Cake is grain free and dairy free and good enough for you to be eaten for breakfast :)


3 eggs

1/4 cup coconut oil softened

1/3 cup pure maple syrup

1 1/2 tsp pure almond extract

1 teaspoon pure vanilla extract

1 teaspoon apple cider vinegar

2-1/2 cups @bobsredmill almond meal/flour

1 tbsp @rootandbones Cordyceps

1/2 teaspoon baking soda

1/2 teaspoon sea salt

3 ripe figs sliced

1 pear sliced


•Preheat the oven to 350 degrees F and line a 9-inch springform pan with parchment paper.

•Add all of the ingredients except for the fruit to a high-powered blender. Blend until combined. •Pour the cake batter into the pan and smooth into an even layer. Arrange the sliced figs and pear on top, tucking gently into the batter.

•Bake for 25 to 30 minutes or until cake is golden brown. Turn off the oven and keep the cake in the oven for another 10 to 15 minutes until toothpick in center comes out dry

•Allow cake to cool 30 minutes before releasing it from its mold. Serve with nuts, drizzled honey or fresh fruit slices
