When it's too hot to cook, this is a wonderful summer snack or meal! This Caprese salad is super powered with the amazing benefits of pine pollen.
1 lb tomatoes
4-6 oz fresh mozzarella (depending on how much cheese you like)
handful of fresh basil
1-2 teaspoons pine pollen
olive oil
balsamic vinegar
salt
pepper
Slice tomatoes and mozzarella in 1/2 slices. julienne the basil. Arrange on a plate and drizzle with a generous amount of olive oil and balsamic. Sprinkle with the basil, pine pollen, salt and pepper. This time of year borage grows in a abundance so if you want to make it fancy, add some edible flowers. That’s it! Enjoy!
